{"id":9612,"date":"2019-11-28T22:32:57","date_gmt":"2019-11-28T22:32:57","guid":{"rendered":"https:\/\/persevines.com\/producto\/per-se-la-craie\/"},"modified":"2025-07-11T15:36:40","modified_gmt":"2025-07-11T15:36:40","slug":"per-se-la-craie","status":"publish","type":"product","link":"https:\/\/persevines.com\/en\/producto\/per-se-la-craie\/","title":{"rendered":"Per Se La Craie"},"content":{"rendered":"<div class=\"page\" title=\"Page 1\">\n<div class=\"section\">\n<div class=\"layoutArea\">\n<div class=\"column\">\n<p>La Craie comes from the South facing slope of Monte\u00a0Alabanza, Its parcel is long and goes from West to East\u00a0entirely in the vineyard, from Un\u00ed at the East until the\u00a0Conifers Forest to the West.\u00a0Here the soil becomes short and the calcareous rock\u00a0flourishes on topsoil.<\/p>\n<p>The Malbec and Cabernet Franc were destemmed into 500-\u00a0liter vats where they co-fermented. Fermentation was\u00a0spontaneous with indigenous yeasts and vinification was\u00a0carried out with very gentle daily trampling. The skins were\u00a0in contact with the wine for 40 days. The aging was 16\u00a0months in used neutral French oak barrels.<\/p>\n<p>This vintage shows us a unique facet of La Craie: an\u00a0extremely austere wine on the nose, shyer than it usually is\u00a0a deep soil wine that needs time to showcase its personality.<\/p>\n<p>The vintage in particular makes us think about the\u00a0introspective character of a wine that will have a lot to show\u00a0in years to come. The palate is very striking, of root wines,\u00a0with marked tension, austere and very deep.
